Traditional coleslaw is ok…although, there’s really nothing all that special about it: shredded green cabbage, oodles of mayonnaise, some vinegar,…well, uhh, I guess that’s pretty much it…unless you’re really lucky and you score some grated carrots in your very-uninspired side dish. Perhaps my main qualm is the monstrous amount mayo that is commonly used to douse the, otherwise fairly innocent, cabbage. If I didn’t know better, I’d think that the mayo was suffering from some sort of inferiority complex, only ever succeeding in making itself feel better by smothering the other ingredients’ assets. The poor cabbage never really stood a chance against the bland, yet, brawny and bullying mayonnaise.

This recipe is a play on coleslaw which gives cabbage its pride back. All of the ingredients used here are respectful coleslaw contributors, who know how to coexist harmoniously, and, unlike mayonnaise, are secure enough in their own skins to allow their teammates the opportunity to experience their rightful moment of glory. How’s that for social justice on your plate?

The ingredients in the salad make for a prettily coloured plate and the dressing is mmm-mmm good.

Asian Coleslaw

  • 6 tablespoons rice wine vinegar
  • 6 tablespoons vegetable oil
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons minced fresh ginger root
  • 1 1/2 tablespoons minced garlic
  • 5-6 cups red cabbage (or green, or a mixture of both), shredded
  • 1 small broccoli, cut into little florets
  • 2-3 cups carrots, grated
  • 6-8 green onions, sliced
  • 1 cup fresh cilantro, chopped
  • 1/2 cup shelled sunflower seeds
  1. In a medium bowl, whisk together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic.
  2. In a large bowl, mix the cabbage, broccoli, carrots, green onions, cilantro, and sunflower seeds. Toss with the peanut butter mixture just before serving.
